DIY recipe: Hello Kitty mini apple pies

A few months ago, I saw this incredibly kawaii (aka adorable) recipe for Hello Kitty mini apple pies on I Heart Baking. This morning, I finally got around to making some myself; here’s the step-by-step process!

*Makes 10 individual pies

What you’ll need:

  • 1 Hello Kitty sandwich/cookie cutter (I bought mine on eBay)

  • 4 or 5 apples (I like to use Gala, Fuji, or Honeycrisp, but many varieties work just great)
  • 2 packages of pre-made apple pie crusts
  • 2 Tablespoons flour
  • 2 Tablespoons sugar
  • 2-3 teaspoons cinnamon
  • melted butter (about 2 T, enough to brush over each pie)

1.) Rinse and then peel the skin off each apple (be sure to use only about 4 or 5 apples total)

2.) Cut each apple in half and slice each half into small, bite-size pieces

3.) Stir in the flour, sugar, and cinnamon with the apples. Be sure to mix all ingredients well!

4.) Next, be sure to thaw out your pre-made pie crusts (I’m all for time-savers!). Stick each rolled up crust in the microwave for 25 seconds if needed.

5.) Roll out your pie crusts and cut out 5 bottoms and 5 tops of pie crusts using your Hello Kitty sandwich cutter. (neat tip: Hello Kitty’s eyes and nose count as air vents)

*I found it helps to roll the pie crust into a ball and then re-roll it with a roller, making thicker crust than the ones straight from the tube (they tend to be thin). Cut the tops of the pies (Hello Kitty’s face) using the cutter on the thicker crust. This way, the top crust fits better over the bottom crust.

*If crust gets stuck in the sandwich cutter’s eyes or nose, use a toothpick to push out the extra dough.

6.) Using a spoon, heap small spoonfuls of the apples onto each crust (be sure not to put much more than a Tablepoon of filling on each one).

7.) Neatly attach the top crust to each bottom crust, lightly pressing the dough together. Crimp the edges using a fork.

8.) This step is optional- brush each pie with melted butter and sprinkle with sugar.

9.) Bake at 400 degrees F for 20 minutes. Then enjoy! 🙂
